nothing too fancy

spinach and strawberry salad 

serves two
raw baby spinach, about 125 grams, washed and dried
fresh strawberries, about three handfuls, sliced with stems removed
pumpkin seeds, roasted

dressing/ mix in a jar 1tbsp honey, salt, 2-3 tbsp extra virgin olive oil, 1tbsp Dijon mustard, lemon juice/ keep adding lemon juice and salt until you are satisfied with the taste/ recommendation: use seed style Dijon mustard (whole grain mustard) as this will give a whole other perspective to the taste.

In a large bowl toss spinach leaves, strawberries, pumpkin seeds and dressing. Eat immediately!

This salad screams spring! You have freshness of strawberries, a bit of bitterness from spinach leaves and sweet and crunchy flavor of mustard and pumpkin seeds. Quick and easy.
